The olives come only from our own groves in the Borsacchio Reserve, a few steps from the sea, some with centuries-old trees. We do not buy olives from other growers.
We pick by hand or with light harvesting aids, at the right ripeness, and take the olives to the mill within a few hours. The mill changes from year to year: for each batch we state which one.
Every season the oil is tested in a laboratory. The year’s reports can be looked up by batch, in the Supply chain section.
